Evan brought home a bunch of ripe, homegrown tomatoes this weekend and I immediately wanted to make a crunchy fresh corn salsa situation. This HIT the spot!!!!



need:
2 ears of corn
1/2 red onion
handful of cherry tomatoes (or 1 medium-sized tomato)
1 cucumber
2 limes
handful of cilantro
1/4-1/2 cup of red wine vinegar
1 tablespoon of smoked sea salt
1/2 tablespoon of cumin
1/2 tablespoon of paprika
steps:
peel both ears of corn
turn the grill on high and place the corn on the flame for a few minutes on each side, then flip (you will hear the corn start to pop if they’re on too long)
remove when charred on each side
chop all veggies and cilantro - add to a big bowl
use a knife to shave off the corn kernels into the bowl
Add the red wine vinegar, juice of 2 lemons, smoked salt, paprika, and cumin
big stir, taste, and add more seasoning as needed
notes:
You can eat this with your favorite chips, or add it to a grilled chicken salad with feta, sunflower seeds, and top with olive oil to make it a meal! 🥗
