everyone loves a filling, nutrient-dense breakfast to start the day out right!! 💪 This one has ~20 grams of protein/serving.
need:
(6 servings)
1 dozen eggs
pasture raised if possible 🥚
1 lb breakfast sausage
1/2 cup cottage cheese
1/2 cup shredded cheddar cheese
1/2 onion
1 bell pepper
2 tablespoons chopped chives
2 tablespoons green onion
salt, pepper, garlic powder
steps:
preheat oven to 375
cook the breakfast sausage until all pink is gone
I use a stainless steel non-stick pan like this one
crack eggs into a large bowl and whisk
add in cooked sausage
chop all veggies/herbs and add to bowl
add both cheeses (save a little cheddar)
add 1 tablespoon of each seasoning
salt, pepper, garlic powder
stir, stir, stir
pour into a large baking dish
sprinkle the rest of the cheddar cheese
bake for 25-28 minutes
notes:
this is an easy one to prep at the beginning of the week and heat up each day - I added hot sauce to top it off and it was soooo good. I also thought it would be amazing in a breakfast sandwich. go crazy!!
